whole poultry: 82°C (180°F)
-
poultry pieces: 74°C (165°F)
-
ground meat: 71°C (160°F)
-
fish: 70°C (158°F)

Raw and lightly cooked ingredients
Some traditional Italian recipes use raw or lightly cooked eggs, meat or seafood. Eating raw or undercooked foods may increase your risk of foodborne illness, especially for children, older adults, pregnant people and anyone with a weakened immune system.
Allergies and dietary needs
Recipes may contain common allergens, including wheat, gluten, dairy, eggs, nuts, fish and shellfish. Check every ingredient against your own allergies and dietary needs, and those of anyone you cook for.
Kitchen safety
Cooking involves sharp knives, hot oil, open flames and hot surfaces. Take care, especially when frying, and supervise children in the kitchen at all times.
Alcohol
Some recipes include wine or spirits. Not all alcohol cooks off.
No professional advice
Nothing in this book or on this website is medical, nutritional or dietary advice. Speak with a qualified health professional about your specific needs.
